Fresh Pineapple Poached in Cinnamon Syrup
Ingredients
1 cup white wine or spring or filtered water
1 cup brown rice syrup or honey
3 cinnamon sticks, snapped in half
pinch sea salt
5-6 thin slices fresh ginger
1/2 fresh lemon, halved
1 large pineapple, peeled, halved lengthwise, quartered, core removed, -inch thick slices
Directions
Combine wine (water), rice syrup, cinnamon sticks, salt, ginger and lemon chunks in a large, heavy saucepan and place over medium heat. Cover and bring to a boil, reduce heat to low and cook for 10 minutes to develop the flavors. Add pineapple pieces, cover and cook over low heat, stirring occasionally, until pineapple is translucent, about 7 minutes.
Transfer pineapple and syrup to a bowl and refrigerate until chilled through, about 2 hours. Serve pineapple slices in individual dessert bowls, with chilled syrup over top, garnished with fresh mint or seasonal berries. Makes 6-7 servings.
Note: To create a richer syrup, use soymilk in place of wine or water.
