I'm always on the go—whether to classes (all seven of them!), the Natural Health offices, or the emergency room, where I work as an EMT on weekends—which leaves me with little time or energy to cook. It's no surprise that I order in almost daily. But with food poisoning outbreaks in the news lately, I've become more cautious about what and where I eat—and have started to cook more of my own meals.

 

My challenge: to recreate—quickly and more healthfully—the taste of takeout in my cramped college kitchen. And thanks to Simply Asia Stir-Fry Meal Kits ($5 for one, $48 for a dozen; simplyasia.net), I rose to it. Each bag comes with precooked chow mein, dehydrated Asian vegetables like crunchy water chestnuts and hearty straw mushrooms, and one of three stir-fry sauces: honey teriyaki, spicy kung pao, or mandarin orange (the latter two are also gluten-free). I added pieces of chicken and broccoli florets to mine, although shrimp, tofu, and any other green vegetable would have worked equally well. And since all I needed was a stovetop, not even dormitory debris could keep me from stir-frying. Trust me, if I can do it, anyone can.
