Zucchini Ribbon Pinwheels
Using high-quality prepared foods like frozen chopped spinach and roasted peppers makes these appetizers easy to prepare.
Ingredients1 8-ounce package of cream, farmer’s, or goat cheese, or a wet, not dry and crumbly, feta (like Israeli)
½ cup roasted red peppers packed in water, drained and finely chopped, or one large roasted red pepper, peeled, seeded, and finely chopped
⅓ cup thawed and chopped frozen spinach, drained very well, or the equivalent amount of steamed and chopped fresh spinach, (about 4–6 packed cups)
½ cup golden raisins, roughly chopped
1 teaspoon Indian curry powder
Sea salt and freshly ground pepper to taste
2–3 long, large zucchini

Directions1.Allow cheese to come to room temperature: In a medium bowl, blend it with chopped roasted red peppers, spinach, and raisins. Add curry powder and stir with a fork to combine. Taste for seasoning and adjust with salt and pepper. Set aside.
2.Wash zucchini and cut off the ends. Using a mandolin or a sharp knife, cut the vegetables lengthwise into thin strips. (Depending on the size, you should be able to get about 10 slices from each zucchini.)
3.Assemble the pinwheels by spreading each zucchini ribbon with a heaping teaspoon of the cheese mixture. Starting with the narrow end of zucchini, roll up. Place the rolls on a serving tray and chill until serving time.
