1 cup whole wheat flour
1 teaspoon salt
½ teaspoon baking soda
¼ teaspoon cream of tartar
1 cup skim milk
2 eggs
2 tablespoons olive oil (plus extra for skillet)
2 cups cooked soft wheat berries
2 tablespoons chopped parsley
3 scallions, sliced thin


  1. Mix flour, salt, baking soda, and cream of tartar together in a large bowl.

  2. In a separate bowl, combine skim milk, eggs, olive oil, and wheat berries. Beat lightly. Pour wet ingredients into dry ingredients. Add parsley and scallions and mix until ingredients are combined.

  3. Heat nonstick skillet over medium heat. Brush lightly with olive oil. Pour batter by ¼cup measures. Cook until lightly brown on bottom. Flip. Finish cooking on second side. Repeat. Serve with mixed greens.
