Tropical Tabbouleh

Ingredients
1½ cups bulgur wheat1 garlic clove, chopped
1¼ teaspoons salt
1 medium mild red onion, finely chopped
¼ cup fresh lime juice
3 tablespoons olive oil
¼ teaspoon freshly ground pepper
1 cup packed fresh mint leaves, plus additional sprigs for garnish (optional)
1 cup papaya, cut in ½-inch cubes
1 cup mango, cut in ½-inch cubes
1 cup pineapple, cut in ½-inch cubes

Directions
- Place bulgur in large bowl; pour 1 quart boiling water over it. Let stand 45 minutes, then drain in colander .
- Meanwhile, using side of heavy knife, mash garlic and salt into paste. In another large bowl, combine garlic paste with onion, lime juice, olive oil, and pepper.
- When bulgur is ready, coarsely chop mint leaves. Add bulgur to garlic-oil mixture, stir in fruit and mint. Arrange on serving platter; serve at room temperature.
