Ingredients3/4 cup bulgur
1 cup hot water
3 tablespoons olive oil
2 tablespoons fresh lemon juice
1 clove garlic, minced
1/2 teaspoon salt
1/2 cup finely chopped fresh parsley
1/2 cup finely chopped fresh mint leaves
1/4 cup finely chopped scallions
1 large tomato, chopped

Directions1. Combine the bulgur with the hot water; let stand for 1 hour or until the bulgur is softened.
