1 egg white
1 tablespoon water
1 pound raw whole almonds
1/3 cup sugar
2 teaspoons salt
2 teaspoons ground coriander
1½ teaspoons curry powder
¼ teaspoon cayenne pepper


  • Preheat oven to 300°F.
  • Beat egg white and water in large bowl until frothy. Add almonds and toss to coat. Transfer almonds to colander and let drain 5 minutes.
  • Meanwhile, combine sugar, salt, coriander, curry powder, and cayenne pepper in bowl; transfer to large food storage bag. Add almonds and shake well to coat. Spread almonds on large rimmed baking sheet in single layer. Bake 10 minutes, stir, and reduce oven temperature to 275°F. Bake 40 minutes longer, stirring occasionally, until almonds are nicely toasted.
  • Remove from oven and let cool 5 minutes. Stir with spatula to help prevent sticking. As nuts cool, use hands to break up clumps. Cool completely. Store nuts in airtight container until ready to serve. Nuts can be frozen for up to 6 months.
