Roasted Parsnips with Maple Syrup
To give this dish a creamier texture and richer flavor, use European-style butter (such as Plugrá) because it has a lower moisture content than regular butter. If you can’t find any, use regular butter.

Ingredients
10 parsnips (about 1 inch in diameter), scrubbed well¼ pound (1 stick) European-style or regular butter, melted
¾ cup maple syrup
2 teaspoons salt

Directions
- Heat oven to 350°F. In a large, shallow baking dish, toss parsnips with butter and syrup. Season with salt.
- Arrange parsnips in a single layer on a large baking sheet. Reserve remaining butter-syrup mixture for basting.
- Roast 45 minutes, basting occasionally with reserved butter, until caramelized. Shake baking sheet occasionally to prevent sticking.
