10 parsnips (about 1 inch in diameter), scrubbed well
¼ pound (1 stick) European-style or regular butter, melted
¾ cup maple syrup
2 teaspoons salt
- Heat oven to 350°F. In a large, shallow baking dish, toss parsnips with butter and syrup. Season with salt.
- Arrange parsnips in a single layer on a large baking sheet. Reserve remaining butter-syrup mixture for basting.
- Roast 45 minutes, basting occasionally with reserved butter, until caramelized. Shake baking sheet occasionally to prevent sticking.
