Combine raspberries and lemon juice in small bowl. Mash raspberries with fork, then press raspberries with rubber spatula through wire-mesh sieve into another bowl; discard seeds. Add honey and mix well. Refrigerate until ready to use. For best results, make the night before to allow flavors to develop.
