Iced Chai Tea

While any mild black tea can serve as the base for this fragrant, spicy summer quencher, Darjeeling is the best choice.


2 1/2 cups water
2 cinnamon sticks
14 cardamom pods
6 whole cloves
1/4 teaspoon ground ginger
3 black tea bags
1/4 cup honey
2 cups whole milk

1. In a medium saucepan, bring water, cinnamon, cardamom, cloves, and ginger to a boil. Reduce heat to low and simmer covered for 20 minutes. Turn off heat.
2. Add tea bags and steep 15 minutes, covered. Remove tea bags. Add honey or agave and stir until dissolved. Stir in milk.
3. Strain mixture into another container. Allow to cool and then refrigerate for about an hour. Serve over ice.
