High Fiber Carrot Cake

Ingredients½ cup honey
3 tablespoons cooking oil
1 cup spelt flour
½ teaspoon sea salt
¾ teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon fresh grated nutmeg
2 cups grated carrots
¼ cup applesauce (unsweetened)
¼ cup chopped walnuts
7 ounces unsweetened crushed pineapple

Preheat oven to 300°F. Beat the honey, cooking oil, and eggs together with a mixer until blended well.
- Sift together the flour, salt, baking soda, baking powder, cinnamon, and nutmeg. Add these dry ingredients to the wet ingredients and mix well. Fold in the carrots, applesauce, nuts, and pineapple.
- Spray an 8" x 8" ungreased pan with cooking spray. Pour the mixture into the pan. Bake at 300°F for 50 to 60 minutes or until a toothpick inserted in the cake comes out dry.
