A Healthier Greek Salad

This salad doesn’t overdo it on the olive oil, and the hummus packs a big protein punch.

Ingredients: 

2 ounces baby arugula
2 ounces romaine lettuce, chopped
2 ounces English cucumber, diced
2 ounces kalamata olives, pitted
1 ounce red onion, julienned
5 baby tomatoes, halved
1 teaspoon fresh basil, chopped
1 ounce baked pita chips
1 1/2 tablespoons lemon juice
1 1/2 tablespoons olive oil
2 ounces fresh hummus

Directions: 

Combine all ingredients, toss with lemon juice and olive oil, and serve immediately on a bed of hummus.
