Grilled Pineapple a la Mode

½ cup coconut ribbons
8 pineapple planks, cut ½-inch thick, cores removed
1 medium banana, cut in ½-inch rounds
1 ripe medium mango, cut into ½-inch cubes
1 tablespoon fresh lime juice
1 pint coconut sorbet
½ cup chocolate sauce (optional, click here for recipe)


  1. Prepare charcoal for grilling (or heat gas grill over low heat or use broiler with pan set 5 to 6 inches under heat); place oiled grill rack about 5 inches above embers. Preheat oven to 350°F. Toast coconut on large baking sheet, shaking pan twice, about 12 minutes, until golden brown. Let cool on baking sheet.

  2. Grill pineapple 8 minutes; turn and grill until pineapple is golden brown and softened, about 6 minutes.

  3. Toss banana and mango with lime juice. To serve, divide fruit among 4 plates, add one scoop of sorbet, and top with chocolate sauce, if desired.
