1. In a medium saucepan, bring almond milk, maple syrup, and cinnamon to a gentle boil.
2. Add oats and vanilla extract; stir to coat.
3. Return to stove, lower heat, and simmer, uncovered, 7 minutes, or until liquid is absorbed.
