Fruit & Nuts Oatmeal

1⅔ cups unsweetened almond milk
2 tablespoons maple syrup
⅛ teaspoon ground cinnamon
1 cup old-fashioned rolled oats
⅛ teaspoon vanilla extract
⅓ cup dried cranberries
1 tablespoon chopped walnuts


1. In a medium saucepan, bring almond milk, maple syrup, and cinnamon to a gentle boil.
2. Add oats and vanilla extract; stir to coat.
3. Return to stove, lower heat, and simmer, uncovered, 7 minutes, or until liquid is absorbed.
4. Divide into 2 bowls and sprinkle with cranberries and almonds.
