Fig & Apple Puree with Vanilla Low-Fat Frozen Yogurt

½ cup chopped dried figs
½ cup peeled and diced apples
1 tablespoon honey
½ teaspoon fresh lemon juice
2 cups of water
¼ cup walnuts, toasted
4 scoops vanilla frozen yogurt


1. Add the figs, apples, honey, lemon juice, and water to a small saucepan and bring to a boil. Turn down the heat and simmer until the liquid has reduced by half, about 10 minutes.

2. Toast the walnuts in a small pan over medium heat until golden brown, about 3 minutes. Remove from the heat, chop, and set aside.

3. Add the fig mixture to a blender or food processor and process to a thick purée. Spoon the warm purée over scoops of your favorite vanilla frozen yogurt and top with the chopped walnuts. Note: If not using fig purée immediately, let cool and refrigerate in an airtight container for 3 to 5 days. When ready to use, warm the purée over low heat.
