Dandelion Green Salad

The natural fats in almond oil and the sweet zing of sun-dried tomatoes mellow out the distinctive bitterness of dandelion greens in this fresh spring salad.

1 bunch (about 8 ounces) dandelion greens, washed; if greens are bitter, remove center ribs
⅓ cup sun-dried tomatoes in oil, drained and sliced
⅓ cup sliced almonds, toasted
2 tablespoons almond oil
1 tablespoon Champagne vinegar
2 ounces fresh goat cheese
Freshly ground black pepper to taste


1. In a large salad bowl combine greens, sun-dried tomatoes, and toasted almonds. Whisk together almond oil and vinegar and toss with greens mixture to coat.

2. Dish salad onto serving plates and top each with crumbled goat cheese and freshly ground black pepper.
