Ingredients

1 tablespoon olive oil
1 small yellow onion, finely minced
2 garlic cloves, finely minced
1 bay leaf
½ teaspoon sweet paprika
2 15-ounce cans black beans, drained and rinsed
½ teaspoon hot chile sauce
¼ cup dry sherry

Directions

Heat the oil in a medium saucepan over medium-high heat for 1 minute. Add the onion, garlic, and bay leaf and cook until the onion is soft, about 2 minutes, stirring often. Stir in the paprika and simmer 30 seconds, or until fragrant. Add the beans and cook until heated through, 5 minutes, stirring often. Add the chile sauce and the sherry, bring to a low boil and cook for 1 minute. Serve immediately or allow to cool and transfer to a resealable freezer bag for up to 1 month.
