Choosing Raw "Peanut" Noodles

Ingredients

For the Asian Dressing (Makes 1 ½ cups)
  • 1” piece gingerroot
  • 1 cup olive oil (or flax oil)
  • 2 teaspoons toasted sesame oil
  • Juice of 1 lime
  • ¼ cup mellow white miso
  • 6 dates, pitted, or ¼ cup maple syrup
  • 2 tablespoons nama shoyu
  • 1/3 cup water

  • Blend all ingredients on high till creamy and emulsified.


    For The Noodles
  • 1 large or 2 small zucchini, spiralized or sliced with a vegetable peeler
  • ½ red pepper, cut into matchsticks
  • ½ carrot, cut into matchsticks
  • ¼ large or ½ small cucumber, grated and peeled into long strips
  • Scallions or green onion to garnish

    (Serves 1-2)

    Directions

    Prepare and mix together all the vegetables (save the scallions or green onion). Toss them with ¼ cup dressing, adding more if necessary, and then sprinkle with scallions. Sugar snaps, shiitake mushrooms, snow pea shoots, or mung bean sprouts would also be a great addition to the noodles.
