Barley-Sweetened Chocolate Chip Oatmeal Cookies

This healthy twist on everybody's favorite cookie contains whole grain oats and chocolate chips sweetened with barley malt. They're so good, even kids won't notice the absence of refined sugar.
Barley-Sweetened Chocolate Chip Oatmeal Cookies

Ingredients

1 cup raisins
1 cup unsweetened apple juice
¼ cup coconut oil
1 cup barley malt sweetened chocolate chips
1 cup whole grain oat flour
1 cup whole grain oatmeal
1/2 teaspoon baking soda
1 teaspoon ground cinnamon

Directions

  1. In a large bowl, combine raisins and apple juice. Refrigerate overnight.

  2. In a blender, combine raisins, apple juice, and coconut oil, and puree for about 1 minute.

  3. Preheat oven to 375°F. In a mixing bowl, combine chocolate chips, oat flour, oatmeal, baking soda, and cinnamon. Fold in the raisin-and-apple-juice puree.

  4. Spoon teaspoons of dough onto a thin baking sheet and bake for 15 to 18 minutes, until lightly toasted.
