A high-sodium diet doesn’t just put you at risk for developing high blood pressure: Three studies published in Nature suggest that excess salt intake contributes to the development of a wide range of auto-immune diseases, including multiple sclerosis (MS), psoriasis, rheumatoid arthritis and ankylosing spondylitis (arthritis of the spine), says senior study author David Hafler, M.D., a professor and chair of neurology and immunobiology at the Yale School of Medicine in New Haven, Conn. “There are surely multiple environmental causes of these diseases, but we now have scientific evidence to suggest that diet might be more important for prevention than we thought,” Hafler says.
