After 13 years of being a vegetarian, I decided to eat meat again—on the condition that it be raised as humanely and sustainably as possible. This proved daunting when it came to fish until I discovered Kona Kampachi ($8.75 to $17 a pound; kona-blue.com), a sushi-grade yellowtail fish that’s farmed in open-ocean cages off the coast of Hawaii.
