One of the most interesting kitchen products to cross my desk in months, the Preserve Composite Cutting Board ($13 to $25; recycline.com or Whole Foods Markets) looks and feels like stone (it's smooth, dark, and sturdy) but is actually made of paper. Preserve takes 100 percent post-consumer recycled paper and coats it in vegetable-based resins; this keeps the cutting board totally waterproof (and dishwasher-safe) while helping it stand up to sharp knives. And the board isn't just good for the planet—it's good for the kitchen as well. Because it's nonporous, it doesn't encourage bacteria growth, making it an ideal prep surface for meats and fish.
